1. Wheat is the most concentrated source of Vitamin E found in nature.
2. Wheat berries, the kernels you pick straight from a farmer's field, have 40 of the 44 essential nutrients for life. That's 91% of the types of nutrients our bodies need to thrive!
3. Whole grains offer a “complete package” of health benefits, unlike refined grains, which are stripped of valuable nutrients in the refining process.
4. All whole grain kernels contain three parts: the bran, germ, and endosperm.
5. The bran supplies B vitamins, copper, zinc, and magnesium.
6. The germ is rich in vitamin E and B vitamins.
7. The endosperm is the interior layer that holds carbohydrates, protein, and small amounts of some B vitamins and minerals.
8. The way wheat is milled at the industrial scale, the bran and the germ get taken out. So white bread is just the endosperm.
"Enriched" flour is where some B vitamins and iron are added back and these vitamins are synthetic.
"Fortified" means more synthetic vitamins have been added that weren't originally there.
9. Preservatives. Dough conditioners. A loaf of white bread can contain ingredients with industrial applications – additives that also appear in things like yoga mats, pesticides, hair straighteners, explosives and petroleum products. We'll
just name one: Azodicarbonamide. It's a chemical foaming agent
that gives plastics a light, spongy feel that gets put into a lot of bread products.
